Hydrabadi chicken dum biryani

Cooking Instructions

(1) Marinate chicken by adding Ginger garlic paste, salt, red chilli powder, garam masala powder, black pepper powder, Shan biryani masala, green chilli, chopped mint, coriander and Yougurt. (2) Mix it gently.For batter result keep marinated chicken in refrigerator for 1-2hours.

(1) Cut onion into slice. (2) Add 3tbs veg oil/ghee in a pan, fry onion till it turns golden brown.Then crush the fried onion by hand. (3) Mix gently crushed onion and remaining oil in marinated.

(1) Heat little oil in a pan, add garam masala, water and salt till boiling. (2) Add washed and soaked rice to the boiling water and cook on high flame. (3) Wait and drain water after 3/4 rice cooked.

(1) Put marinated chicken in pan (2) Add rice, garnish with fried onion, chopped mint, coriander, sliced green chilli and 2tsp ghee.

Close Pan lid, heat(dum) 5min on high flame then 20 min on low flame.

If you ask me whats one comfort food that i wont hesitate to eat anyday.. This surely is the one. I mean, C'mon, who doesn't like Biriyani?? A complete meal in itself, has all the aroma that i possibly can imagine.. Just a tempered Raita of your choice, and it's sorted. This has to be my #favourite dish of all.I still remember the day,I made Biriyani for the first time. Gosh, so much nerves I had, I must say .With all those list of ingredients, And num of steps, trick to get the rice "right", Fhewwww...But, I can happily say, I DID IT. Yes, it was a success and since then there was no looking back. Once in a fortnight, I have to make biriyani. That's the demand of my Man, you know.There are various methods of making biriyani.. Everyone must have their signature dish, I believe. Now, this one is mine. Shweta Patra
