Sift the flour n salt into a large bowl. Stir in the yeast

Put in a bowl, cover w clingfilm n leave in a warm place

the dough again to knock out the air. Divide into 12pieces

from each into a 20.5cm roll. Curve into a ring n pinch

the edges to seal. Put the rings on an oiled baking sheet.

Cover w oiled clingfilm n leave to rise in a warm place

20mis or til risen n puffy. Add the sugar to a large

saucepan of water. Bring to the boil then drop in the bagels

one at a time n poach 4 15secs. Lift out w a slotted spoon

n return to the baking tray. Brush w beaten egg.

Bake in the preheat oven 4 12-15mins or til golden brown

Transfer to a wire rack n serve when cool.
