Gather all the ingredients.

Oil in a Dutch oven (3 1/2qt) over medium heat. Add onion.

Stir in salt, then cover until softened. Stir occasionally.

If the onions get pasty, scrape frequently.

Uncover and cook until lightly browned.

Stir in ginger, garlic, and cook until fragrant.

Stir in meat and cook until evenly cooked through.

Pour in the water and add bay leaf and mushrooms.

Bring it to a simmer. Scoop scum on the surface and discard.

Cover and gently simmer. Cook for 10 minutes.

Remove from heat and break apart the curry mix. Stir.

Keep stirring until dissolved.

Stir in sugar and butter.

Bring to a simmer and stir occasionally for 10 minutes.
