Gather all the ingredients.

Combine potato starch and water, and set aside.

Place noodles in a heat resistant glass bowl.

Pour hot water over the noodles.

Let it soak until pliable and bendy(3-5 minutes).

Transfer noodles to a colander and drain well.

Cut the noodles into bite sized pcs with scissors. Set aside

Oil in a large skillet over medium heat.

Add ginger and cook until fragrant.

Add pork and cook until almost heated through.

Add napa cabbage/mushroom/water and cook until wilted.

Add all the sauce ingredients, and bring it to a simmer.

Cover and stir at times, cook for 15 minutes.

Uncover and add noodles, then simmer and cook for 5 minutes.

Taste, and season with salt and pepper to taste.

Stir in starch mix, and bring to a boil to thicken the sauce

Add sesame oil and stir once more. Serve.
コツ・ポイント
After adding the napa cabbage/mushrooms to a skillet, add water to create steam, which helps wilt the veggies.
