Colourful Stringhoppers with Crab stew

Credited as being one of the healthiest cooking techniques ,the process of steaming is healthy ,quick and also convenient .This easy to make and super delicious Iddiyappam also known as string hoppers is a cuisine from the south . It is made of rice flour and cooked with the help of steam. I have tried to colour my plate with colour variations in this iddiyappam by giving 3 different variations. Ragi string hoppers with ragi flour , green string hoppers with coriander chutney and kept one white . So here you have a lipsmacking treat of tri colour iddiyappams with delicious crab stew. Ingredients

  1. For the string hoppers :
  2. 1/2 cupragi flour
  3. 1 cuprice flour
  4. 3 tbspcoriander chutney (coriander + water + pinch of salt)
  5. 2 cupsWater + 3/4 cup
  6. 1 tspoil
  7. 1 tspsalt
  8. For the crab stew :
  9. 8-10cleaned and washed crabs
  10. 1big onion
  11. 1small tomatoe
  12. 1 Tspginger garlic paste
  13. 1/2 tbsptred chilli powder
  14. 1/4 tspgaram masala powder
  15. 1/4 tspturmeric
  16. to tasteSalt
  17. 1/2 cuptamarind juice
  18. leavesFew curry
  19. leavesFew coriander
  20. To temper :
  21. 1 tspmustard seeds
  22. 2broken red chillies
  23. 3 tbspoil
  24. 3 cupswater

Cooking Instructions

  1. 1

    First make the crab stew and keep aside for deepened flavours.

    Heat oil in a deep sauce pan. Add mustard seeds. Let it splutter. Now add the broken red chillies and curry leaves. add the chopped onions and saute till transparent. Now add the ginger garlic paste and saute till raw smell disappears.

    Now add the spice powder except garam masala powder. Add the tomatoes and salt to season. Mix,cover and cook till tomatoes are mushy.

    Now open and add 3 chups of water. Add garam masala powder.add the tamarind juice.Cover and let it boil on high.

    Check if onion are soft. Once soft add the crabs.

    Now let it boil on medium flame for 5 to 7 minutes. Add chopped coriander. Cover and leave aside. Crab stew is ready

    For the string hoppers. Add 2 cups water to a vessel with a to salt and 1 tsp oil. Boil. When it boiling add the flour. Switch if the gas. Stir well. Check if onion are soft. Once soft add the crabs. Cover and leave for 15 minutes.

    Open and knead on a plate for 2 minutes. Divide the dough into 2 halves. Cover and keep one half aside. Mix coriander chutney in the other half.

    Knead well. Cover and keep aside.

    Now boil 3/4 cup water with salt and a tsp oil. Add the ragi flour. Mix. Switch of the gas. Cover and leave for 15 minutes.

    Now keep the steamer ready with water. Let the water boil. Grease the idli plates as well as the sev press machine in and out.

    Pinch ball of one colour. Add to the machine. Press on the idli plate in a circular motion.Repeat same with the other colours on other plates. Now steam for 15 minutes.

    Leave for 2 minutes after switching of the steamer. Now remove on a plate. Drizzle with roasted seasame seeds. To serve. Layer the tri colour rice noodles in a bowl. Pour some hot stew and serve right away.
