Bacon Kimchi Fried Rice (김치볶음밥) Bacon Kimchi Fried Rice (김치볶음밥)
Though my mom did most of the cooking when we were kids, every once in a while, my dad would take to the kitchen to make one of his three signature dishes which were:1) kimchi jjigae,2) kimchi fried rice, and3) kalbi.Well, one of those plus a huge mess.Of the three, I think his kimchi fried rice was my favorite. Maybe it's because I remember sitting at the bapsang with nothing but a huge wokful of fried rice and as many spoons as there were people eating, and just digging in until we were all stuffed. Definitely because it was just so tasty - the simple deliciousness of pork belly or bacon, and sauteed and slightly caramelized ripe kimchi, all tossed with yesterday's rice and a little bit of sugar, soy sauce and gochujang to make it even spicier.Delicious memories! As with most fried rice recipes, stale rice works best. So the next time you have Chinese, Thai, Korean or Japanese takeout, you might want to save your leftover steamed rice to make this dish later in the week. Also, while some people like to make their kimchi fried rice with fresh kimchi, I personally like it much, MUCH, better with the ripe, sour stuff. x -

Ham Fried Rice (ハムチャハン) Ham Fried Rice (ハムチャハン)
This is a very simple fried rice recipe that I adapted from Just One Cookbook. It's quick and easy and quite flavourful. Mrs Wyrm doesn't find green onions as bad as regular onions so they get into this. This should really be done with a wok but I don't have one that works on my induction cooktop so I made do with a frying pan. I also used bacon grease instead of cooking oil which added even more flavour. 蛟龍Stormwyrm -

Crumbly Fried Rice Crumbly Fried Rice
When you live alone, you might frequently cook fried rice. If you follow the usual way, you will end up having soggy fried rice. It is difficult to make restaurant-like light fried rice.I wanted to make a non-greasy and authentic fried rice with simple ingredients. That's why I created this recipe. To make a light fried rice, it is essential to have a stovetop with a lot of gas. Usually hobs at home don't work well. To get over this, heat your frying pan very hot beforehand.By mixing the rice and raw egg, each grain of rice is coated with the egg sheen and your fried rice will become crumbly. Village Fried Rice (Nasi Goreng Kampung) Village Fried Rice (Nasi Goreng Kampung)
“NASI GORENG KAMPUNG” is a typical kind of fried rice from the Riau Islands. It's also commonly found in Malaysia, because the people are still the same Malay family. It has simple spices mixed with candlenut and dried shrimp paste, so the aroma is sharp and distinctive --- it can certainly be tempting. This fried rice is tasty, especially with a sprinkling of fried anchovies that are so crunchy. It's also pretty hot and spicy, because it's sprinkled with sliced chili. Here is the recipe...
