I adapted this recipe from a regular sugar cookie and transformed it into a delicious lemon sugar cookie recipe! They get crispy while a bit soft at the same time. They melt in your mouth releasing an explosion of flavors. You won't be able to feel the lard flavor, because it will fade away after it's cooked, however you can still substitute it for butter if you prefer.

I wanted to make my lemon poppyseed loaf, hubby wanted me to make it into cookies... adjusted recipe to fit a basic sugar cookie recipe, add lemon and poppyseed... PERFECT!!!!
