An egg casserole is a simple meal that I love making during special occasions especially When I am hosting friends. I learnt it from an American friend and I found it interesting and something worth trying. For the love of good food and experimenting I tried it not once not twice and it turned out well. Please try and you will love it.

An egg casserole is a simple meal that I love making during special occasions especially When I am hosting friends. I learnt it from an American friend and I found it interesting and something worth trying. For the love of good food and experimenting I tried it not once not twice and it turned out well. Ingredients

  1. 4large eggs
  2. 1/4minced meat
  3. 3large potatoes
  4. 1large red onion
  5. 1spring onion
  6. 2 clovesgarlic
  7. Corriander
  8. Capsicum
  9. Halfgreen pepper
  10. 2Carrots
  11. Black pepper
  12. Salt
  13. Cooking oil
  14. Ketchup
  15. Garam masala

Cooking Instructions

    Chop and prepare all the ingridients. Dice small potato pieces.

    Fry the minced meat with onions and garlic, then steam the potato slices with salt to taste.

    In one bowl, beat the eggs, mix the steamed potatoes, fried minced meat then the carrots, capsicum, and coriander. Add hot (chilies if desired) Mix them well and gently.

    Heat your saucepan on low heat and put a table spoon of cooking oil, make sure it spreads evenly, then pour gently your mixture in a circular motion.

    Let it cook for like 10 minutes, then turn the opposite side to cook too. Add a tablespoon of oil then turn using a round plate that you cover the pan then turn it to avoid breaking,

    Serve hot once it has cooked the other side.

    Dice into desirable sizes then enjoy.

    The egg casserole can be taken for breakfast or as a meal combined with chapati, bread or crepes. It can also be served with tea, coffee or juice.
