One Pot Pork Picadillo with Rice
A delicious one pot meal.
Cooking Instructions
- 1
Dice the potatoes. Get the tomato sauce. This is the brand I used.
- 2
Sauté the rice and potatoes in butter with the spices 7 minutes. To a pot add all the pork ingredients except the pork and tomato sauce.
- 3
Add the water and cook covered till the liquid is absorbed. Test the rice to see what doneness it is. If done or near done, add the pork and tomato sauce and paste.
- 4
Allow to simmer covered for 7 minutes covered. Let rest 10 minutes covered undisturbed then serve. I hope you enjoy!!!

This dish is hearty and full of flavor. It uses brown rice, so it takes a bit longer to cook, but it's hands off for the most part. If you'd like to use long grain white rice or quinoa instead, be sure to adjust the cooking time. Recipe adapted from : Showmetheyummy.com Christina
