This soup uses smoked paprika, cumin and garlic to give some warmth and depth of flavour to earthy lentils, perfect for the wintery showers we keep having!

Ingredients

30 minutes
4 - 6 servings
  1. 3 tbspsunflower oil / butter
  2. 1big onion, chopped
  3. 3 clovesgarlic, finely chopped
  4. 3 tbsptomato paste / puree
  5. 1.5 tspsmoked paprika
  6. 1 tspground cumin
  7. 1/2 tspground turmeric
  8. 1/2 tsplow sodium salt
  9. 1/4 tspground black pepper
  10. 190 g (1 cup)dry red lentils
  11. 2large carrots, sliced
  12. 1large skinless, boneless chicken breast
  13. 1350 ml (6 cups)chicken stock (3 Knorr cubes)

Cooking Instructions

30 minutes

    Heat the oil /melt the butter in a large pan and gently fry the chopped onion until golden

  2. 2

    Add the garlic and fry a further minute

  3. 3

    Add the tomato paste, spices, salt and pepper, fry for 2 minutes until well incorporated

  4. 4

    Add in the lentils, carrots and chicken breast and cover with the stock

  5. 5

    Bring to the boil then turn down and simmer, covered for 20 minutes until the lentils and carrots are soft and the chicken is cooked through

  6. 6

    Remove the chicken breast, shred and stir back into the soup

  7. 7

    Serve with some nice bread and garnish with some chopped coriander
