Ingredients

1 tbspoil
2red onions, thinly sliced
1leek, thinly sliced
1350 mlhot vegetable stock
3green apples, peeled, cored and diced
1/2 tbspfreshly chopped thyme
1/2 tbspfreshly chopped rosemary
to tastesalt and pepper

Heat the oil in a large pan over a medium heat

Add the sliced onion and leek and cook, stirring often until just turning golden
3

Pour in the stock, add the apples and herbs and bring to the boil
4

Turn down to a simmer and let cook for 10 minutes

Season to taste and serve
