Peanut sauce and matoke

Ingredients

1 hour
7 servings
  1. 10-15green bananas (plantains)
  2. 4 cupsraw peanuts
  3. 2medium onions
  4. 3large tomatoes
  5. Salt
  6. 1/2 tspturmeric powder
  7. 1/2 tspblack pepper
  8. 1/2 tspcumin powder
  9. Cooking oil

Cooking Instructions

    Wash your bananas and boil them as they are until well cooked. Set them aside to cool down.

    Wash your peanuts and place them on a pan, cook until the water has dried out and it's mildly done.

    Wait till they have cooled down then grind them.

    Blend your tomatoes to form a paste.

    Finely chop your onions

    Add oil to your cooking pot then add your onions. Cook until they start to brown.

    Add your blended tomatoes. Let it cook for some few minutes then add the ground peanuts.

    Stir well then continuously add water. The soup formed should not be too thick as it will continue to thicken as it boils.

    Add salt, black pepper, turmeric and cumin powder. Let it cook for some few minutes.

    Peel your bananas and add them to your peanut sauce. Let it cook until well done.

    Enjoy while still hot.
