Ingredients

Marinade 2 hours, grill Half hour
2 people, 4 dinners
  • 2 poundspork shoulder, 1 inch cubes, half ounce per cube each, 64 pieces
  • 16skewers
  • Peanut sauce, also called gado-gado:
  • 1/4 cupshredded Coconut
  • 1/4 cupRaw Spanish whole peanuts
  • 1 cupwater
  • 1 tbseach Sambal, ketjap, rice vinegar, sesame oil
  • 1each shallot, garlic clove, makrut leaf, kemiri nut, thumb of ginger
  • Marinade:
  • 1/2 cupSweet thick soy sauce
  • 200 gramsPalm sugar
  • 100 gramsCandle nuts
  • 200 gramsShallots
  • 1whole garlic bulb
  • 2 TbsSambal pepper sauce
  • 1 TbsGalangal powder
  • 4Limes, juice only
  • 1/2 cupCoriander
  • 1/2 tspCumin
  • 1/2 tspTurmeric
  • Equipment: sauce pan, marinade bowl, skewers, food processor, hatchet
  • Cost: pork $3, sauce, marinade $1, per dinner $1

Steps

Marinade 2 hours, grill Half hour
  1. 1

    To marinade the skewer pork meat: cut in half inch thick strips and one inch squares, half ounce per cube, mix marinade ingredients of shallots, garlic, sweet soy sauce, palm sugar, candle nuts, galangal powder, cumin, sambal pepper, lime juice, and turmeric in food processor, marinade two hours.

    To make the peanut sauce: Grind shredded coconut, peanuts, kemiri nuts, makrut leaf, shallot, garlic, ginger slices in food processor. Scrape into sauce pan. Add water, pepper sauce, thick soy sauce, sesame oil, rice vinegar, leftover satay marinade, bring to boil, simmer till thick. 15 minutes.

    To skewer the pork meat: string four marinaded pork pieces per soaked wet bamboo skewer, leave space for broiler to reach between pork pieces.

    To broil the pork meat: lay under oven broiler 5 minutes, flip to char other side 5 minutes.

    Serve grilled in skewer marinade over fried rice, use big platter. Or drizzle peanut sauce over.

    Drizzle one tablespoon thick hot peanut butter sauce per skewer. See also mock pork skewers, called sateh.
