Butternut squash soup originates from North Africa. Some call it Pumpkin but in Australia it's called Butternut. The difference is that Butternut is somewhat sweeter than pumpkin. The butternut is first roasted in the oven for 25-30 minutes at 200°C till it browns/caramelizes slightly. The accompaniment can be with bread rolls or croutons.

Ingredients

50 minutes
4-5 servings
  1. 1Butternut, large
  2. 1Onion,medium finely chopped
  3. 2Garlic cloves finely chopped
  4. Bacon, 3 pcs finely chopped
  5. 1 litreVegetable or chicken stock
  6. 1/2 teaspoonSalt
  7. White pepper, to taste
  8. Coconut milk, to finish
  9. Equipment: Blender and ladle

Cooking Instructions

    Roast the butternut squash for 30 minutes in the oven at 200°C

    Saute the onions till translucent.

  3. 3

    Add the chopped garlic and saute for 1 minute without burning

  4. 4

    Add the bacon and cook for 3-5minutes till it browns.

    Add the roasted butternut in the vegetables and bacon, the n add the vegetable stock

  6. 6

    Allow the the soup to boil rapidly then simmer it for 20mins. After 20minutes let the soup cool.

    Blend the soup till smooth. Return it to a clean pot and reheat it till piping hot. Finish with Coconut Milk.Use a ladle to serve at least 200-250ml per person.
