Milled /Crushed Cocoa pop Cake

I honestly do not know the name to give to this cake ......this cake recipe was inspired by Ria's Kitchen @cook_29545868 after I peeped into her cocoa pop cake recipe and I baked it. After my experience with her recipe so I decided to try something different. The cocoa crunchy I bought was not crunchy and I didn't want to waste them so I put it in the oven for 8 mins to" bake-dry" it ...lol then blended it into smooth powder. I then incorporated it into @cook_29545868 recipe and the end result was a yummy inside and light crunchy crust outside..... lol

Cooking Instructions

Whisk the butter and sugar until fluffy then add in one egg and mix until well combined

Add in the sieved flour and baking powder, alternate with the milk & egg mixture(whisk the milk, egg and vanilla extract in a bowl)

Then fold in the cocoa pop powder, add in the raisins or dried fruits. Pour into the cake pan and bake in a pre-heated oven for 15mins.

Serve with any drink of your choice

A few days ago a very dear friend of mine called me up to ask me if I was able to make a cake for a small gathering that she was hosting on Friday night. As we were chatting away I asked her if she had a preference, but I already knew that she was a chocolate lover. 🙂 So, two fantastic recipes popped into mind to choose from one was the Chocolate Almond Upside Down Cake or the Walnut – Chocolate Bundt Cake and the choice was obvious the latter. 🙂So, I took out my pots and pans and all my other little gadgets and got to work on it yesterday morning. As I was making the cake I thought to myself ufff have to try the batter to see if its any good, as I mentioned previously me and chocolate not such a good mix hahahahaha, but what can I do!! I have to taste what I make and bake right! and so I did and it was good. 🙂 Popped it into the oven, cleaned up the kitchen and off I went to make my next recipe, which I will be posting tomorrow or Monday not sure yet. 🙂You will see that there is a glaze on the cake…unfortunately, I have difficulties in NL finding some ingredients to make the recipes that I want too. I went to 3 different supermarkets and I could not find heavy cream, 😦 so my glaze is store bought. I wanted to eat a chocolate cake for breakfast even though I was on a low-carb diet. I made one cake and divided it into 6 portions. Sugar intake is limited in my diet but I wanted to take in calories. I brush the cake with rum, add some walnuts or serve it with whipped cream.Okara powder should be very fine. I use shop-bought okara powder which should be rehydrated with 4 times the amount of water. Adjust the amount of the moist ingredients according to the okara powder you use.
