I was always fascinated by the rich traditions of my Muslim friends, especially during Eid. One of the highlights was the delicious ‘mutton yakhni pulao’ that their families would share with neighbors. The aroma of spices and slow-cooked mutton would fill the air from the night before, creating a sense of celebration and community.During my recent visit to Kenya, the pervasive aroma of Kenyan pilau wafting from the kibandas (food stands) lining the streets at lunchtime felt nostalgic. Kenyans take immense pride in their culinary heritage, eagerly sharing their recipes and techniques at the slightest hint of appreciation. In these mealtime gatherings, laughter, stories, and the bonds of friendship were as abundant as the fragrant spices in the air.‘Mutton yakhni pulao’ and ‘Kenyan pilau’ are slightly distinct aromatic rice dishes. Kenyan pilau is milder in spice, often paired with beef, lamb, chicken, or served vegetarian with a side of kachumbari (tomato salsa). Unlike yakhni pulao, Kenyan pilau stock is not cooked down; rice is added the first time after bringing the stock to a boil (atleast from my observation in a few Kenyan homes I visited)While I have enjoyed both experiences, I tried my luck at 'mutton yakhni pulao,' preserving the tradition of communal meals. I am excited to share this recipe, offering a taste of Eid celebrations and lunchtime gatherings in your own home. And what’s yakhni without a burst of fresh ginger #GlobalApron

Ugali is a Kenyan dish liked by many as it is among the staple food. It is prepared from either cassava,maize, sorghum,millet flour. A mixture of the flour can also be used. For me, I prefer hostess (brand name) maize flour.
