Carrot & Dates Cake

Carrot is something which you get all round the year but during winters, fresh and red carrots are available in the market & with these carrots you can make various recipes. Hence I tried out one with it. Let me know how did it turned out.
Cooking Instructions

First soak the dates in hot water for half an hour then grind them into a smooth paste & keep this mixture aside. Now in a bowl add all the dry ingredients like wheat flour, baking powder, baking soda, salt and cinnamon powder. Mix everything well & keep the mixture aside.

Now in a mixing bowl, add oil, curd & castor sugar and mix everything well, without any lumps. Then put a strainer over it and pour the dry ingredients mixture prepared in step 1 above. Now strain the mixture and mix everything well with the oil and curd mixture as shown in the image below.

Now in the same mixture add the dates mixture and give everything a good mix. Add little milk to make a smooth paste.

Then add vanilla essence and mix it. Now add the grated carrots in it and mix it.

Finally add chopped almonds, raisins & dates and mix everything well and make a smooth batter.

Now grease a cake-tin with oil, apply butter paper over it, sprinkle some dry flour over it, dust the extra flour. Now pour the cake batter into it. Dab it twice so that the air bubbles gets off. Now for decoration, take a small bowl, in it take some chopped almonds, some black raisins and some chopped dates. Sprinkle some dry flour over it and dust the excess flour. Now spread these over the cake batter. I've spread some grated carrots also over it, for decoration.

Now for pre-heating, take a kadai for pre-heating with its base covered with salt and a stand over it. Cover it and pre-heat the kadai for 5 mins on high flame and then 3 mins. on medium flame.

After 8 mins of pre-heating, place the cake-tin over the stand & immediately cover the kadai & bake it on a low flame for about 45 to 50 minutes approximately. After 45 minutes of baking, check it by inserting a toothpick, if it comes out clean then your cake is done.

Now remove the cake tin from the gas, let it come to room temperature then de-mold it. Enjoy this homemade Carrot-Dates Cake with your loved ones. ❤
