Korean-Style Potato and Pork Rib Soup

Prepare the ingredients.

Peel the garlic, keeping the cloves whole. Peel and chop the onion.

Wash the green onions. Chop half into small pieces and the other half into larger sections.

Peel and chop the potatoes and carrots. Peel and slice the ginger. Set aside.

Rinse the pork ribs in water 3-4 times to remove blood clots, then blanch in hot water and rinse with cold water. Set aside.

Heat a pan and add some vegetable oil. Sauté the ginger slices until fragrant.

Add the pork ribs to the pan and stir-fry briefly.

Add the onion and garlic to the pan and stir-fry for 1 minute. Add the green onion sections, then pour in 4 1/4 cups of water. Cover and simmer for 1 hour.

Add the Korean chili paste, soybean paste, salt, and black pepper to the pot. Cover and simmer to let the flavors meld.

Taste and adjust the seasoning if needed, then add the potatoes and carrots. Simmer until the ingredients are fully cooked.
