Cooking Instructions

In a pot, add 500 milliliters (about 2 cups) of water to boil the pork ribs for about 5 minutes. For tender meat, simmer on low heat for 30 minutes. (Using a separate pot prevents scum from clouding the broth, keeping it clear.)

Once the pork ribs are ready, in a new pot, add the remaining water, lemongrass, kaffir lime leaves, galangal, and shallots. Boil for about 1 minute or until the water turns a light yellow.

Add the boiled pork ribs, tomatoes, and straw mushrooms.

Use a ladle to press the tomatoes until they burst (for sourness). Add salt, fish sauce, sugar, MSG, tamarind paste, dried chilies, and chili powder (for spiciness and color). Stir and taste. Adjust seasoning as desired, adding more sugar to reduce sourness or more fish sauce for a balanced flavor.

Once the flavor is right, add the green onion/cilantro, wait a moment, then turn off the heat. Serve in a bowl and enjoy with hot steamed rice and a fluffy omelet.
