Serves one person fully
  1. 500 gramspork ribs (or 1 pack from the supermarket)
  2. 4-5 slicesgalangal
  3. 3-4shallots, halved
  4. 1 stalklemongrass, cut diagonally and halved
  5. 5kaffir lime leaves, torn in half
  6. 5or more straw mushrooms (or any available mushrooms like enoki, shimeji, or a mixed mushroom pack from the supermarket)
  7. 3or more tomatoes, halved
  8. 1green onion or cilantro, chopped
  9. 1/2 tablespoonchili powder (reduce if you prefer less spicy)
  10. 3-4dried or fresh chilies (reduce if you prefer less spicy)
  11. 1 literwater (divided for two boils)
  12. 2 tablespoonstamarind paste
  13. 1/2 teaspoonsalt
  14. 1 tablespoonfish sauce
  15. 1 teaspoonsugar
  16. 1/2 teaspoonMSG
  17. Galangal, shallots, lemongrass, kaffir lime leaves, green onion/cilantro, and chilies can be bought as a tom yum pack from the supermarket. Use as much as you have!

    In a pot, add 500 milliliters (about 2 cups) of water to boil the pork ribs for about 5 minutes. For tender meat, simmer on low heat for 30 minutes. (Using a separate pot prevents scum from clouding the broth, keeping it clear.)

    Once the pork ribs are ready, in a new pot, add the remaining water, lemongrass, kaffir lime leaves, galangal, and shallots. Boil for about 1 minute or until the water turns a light yellow.

    Add the boiled pork ribs, tomatoes, and straw mushrooms.

    Use a ladle to press the tomatoes until they burst (for sourness). Add salt, fish sauce, sugar, MSG, tamarind paste, dried chilies, and chili powder (for spiciness and color). Stir and taste. Adjust seasoning as desired, adding more sugar to reduce sourness or more fish sauce for a balanced flavor.

    Once the flavor is right, add the green onion/cilantro, wait a moment, then turn off the heat. Serve in a bowl and enjoy with hot steamed rice and a fluffy omelet.
