Beef Stew with Arrow root

My grandmother used to cook for us arrow root when she was alive she called it nduma. I started cooking it in my house when I got married for my kids and husband. But when I travelled from Kisumu to Nairobi to visit my sister Joyce, she had this idea of mixing beef with arrow root. At first it didn't sound as a good idea but when I helped her cook it tasted awesome. Now I love it and I would like to cook it when I am back in my house. Thank you Cookpad for great cooking ideas.

Ingredients

  1. 500 gbeef, chopped
  2. 3medium sized arrow root, peeled and chopped to pieces
  3. 3carrots, chopped
  4. 2tomatoes, diced
  5. Cooking oil
  6. Onion, diced
  7. 1 piecegarlic, chopped
  8. leavesCoriander, chopped
  9. 1 tsproyco
  10. Salt
  11. 1capsicum, chopped
  12. Meat tenderizer

Cooking Instructions

    Pre soak the beef in meat tenderizer for 15minutes then let it cook for 20 mins or till all the water diminishes.

    Add the onion, garlic and cooking oil. Fry till you have a good aroma. Add tomatoes, carrots and capsicum. Then stir.

    Add the arrow root then some water maybe 2 cups.

    Add the salt and royco then stir again.

    Cover to cook for 30 minutes then add coriander.

    Let it cook for 5 mins then remove from heat.
