Cooking Instructions

Place milk, sugar, salt, and butter into a small sauce pan. Heat over low heat until butter melts and sugar disolves. Cool to lukewarm.

Dissolve yeast in warm water in warmed mixer bowl. Add lukewarm milk mixture and 4 1/2 cups of flour. Attatch bowl and PowerKnead Spiral Dough hook to mixer.

Turn on speed 2 and mix for about 1 minute. Continuing on Speed 2, add remaining flour 1/2 a cup at a time, and mix about 1 and 1/2 minutes or until dough starts to clean sides of the bowl. Knead on Speed 2 for 2 minutes longer, or until dough is smooth and elastic. Dough will be slightly sticky to the touch.

Place dough in greased bowl, turning to grease top. Cover. Let rise in warm place, free from draft for 1 hor, or until dough is doubled in bulk.

Punch dough down and divide in half (if disired). Shape each half into a loaf, and place in greased baking pans (if disired). Cover. Let rise in warm place free from draft, for 1 hour, or wuntil doubled in bulk.

Bake at 400°F for 30 minutes, or until golden brown. Remove from pans immediatly and cool on wired racks.

After a very long hunt I finally found the perfect fluffy bread recipe from a friend and tweaked it to makes my own. I used semolina to really add flavor. I can tell when it's been left out. Also the wheat protein is crucial to the light and fluffy texture. You can get bread flour and leave it out since that's what bread flour is. I just don't like storing different plain flour. My husband is bread lover. And in this situation of self quarantine #stayhome because of the Covid-19 spreading everywhere, we won’t take a chance to go to grocery or bakery just to get the bread. So this is my 1st time of making bread ever. At first I feel nervous because I am going to use buttermilk powder instead of buttermilk. Long short story before the city’s lockdown we couldn’t find any buttermilk or milk at the store. Luckily we got dry cultured buttermilk powder. We just grabbed and brought it home. At that moment we just think “we rather have it and not need it than need it but don’t have it”. So now I have to think how to use it and to not waste it.
