Cooking Instructions

Dice onion, pepper and slice squash.

Heat olive oil in a large skillet. Add onion, pepper and squash and saute until onions turn clear.

Add sage and salt. Continue saute until first sign of browning.

Add cornbread crumbs to the saute. Blend in with vegetables and continue cooking until the vegetables reach a desired level of browning. Serves 4.

This is a quick side dish. I made this on a whim because I got a great price on squash this week and happened to have some cornbread that was ok, but no longer fresh from the oven. It tastes breaded without the labor of preparing a breaded vegetable.
