Make And Take Maple-Apple Pancakes

These taste a lot like the McGriddle cakes from McDonalds. Just not as sweet. Makes 16 cakes. Since the syrup is cooked in you can freeze these, reheat a couple for 30 seconds and go about your day. Great for busy work mornings or for kids to eat on the way to school. A hot and mess free meal.

Ingredients

  1. 2 cupFlour
  2. 2 tbspBrown sugar
  3. 2 tspBaking soda
  4. 2 tspBaking powder
  5. 1/2 tspSalt
  6. 1 cupApplesauce (see my applesauce recipe)
  7. 1 cupMilk
  8. 1 tbspVanilla
  9. 2medium Eggs
  10. 16 tbspMaple syrup
  11. 1Cooking spray, bacon drippings or coconut oil

Cooking Instructions

    Heat griddle on medium high.

  2. 2

    In a large mixing bowl combine the flour, sugar, baking powder, baking soda and salt.

    In a 2 cup measuring glass whisk the applesauce, milk and vanilla.

  4. 4

    Pour the wet ingredients into the dry. Add the eggs and whisk everything together.

    Oil the griddle.

  6. 6

    Pour about 1/4 a cup of batter for each pancake onto the griddle. You want the batter a bit on the runny side so the maple doesn't sit on one side of the cake causing it to stick once you flip it over.

    Quickly drizzle 1 tablespoon of maple syrup onto each uncooked pancake. Avoid the edges and try not to get too much in one place or the maple will harden on your grill.

    Cook for about 5 minutes or until the edges look dry and the entire pancake is bubbly.

    Once you have flipped the pancakes, allow to cook a few minutes more before removing from the grill.

    Transfer pancakes to a plate or wax paper and repeat process.

Some of the best pancakes I've ever made! So good! My 2 year old loves them plain as well!
