When you suddenly feel like baking, you want a simple banana bread without any hassle. The story behind this recipe: As a busy parent, I rarely have time to bake freely. Sometimes I give up because the butter or eggs aren't at room temperature. So, I tried microwaving the butter and using cold eggs, and it turned out just fine! The bread was fluffy, moist, and delicious, so I made it into a recipe.

Try this recipe if you have a pair of left over bananas - those which are overly ripe and the skins have slightly darkened. The quantity is enough for a 20x10x5 pan.

My son super loves bananas so we always have them in the pantry. To avoid wastage of over-riped bananas, I decided to make one of my favorite.

Since school started today I decided to bake some banana bread for my kids so they can pack it for snack and lunch or eat it for breakfast!
