Ingredients

  1. 3 stalkCelery
  2. 1 tbsplemon zest
  3. 1 tspmicroplane ginger
  4. 5Shrimp sliced in 1/2
  5. 1shells from shrimp to make stock
  6. 5button mushrooms-sliced
  7. sliced green onion
  8. salt & pepper
  9. lemon juice
  10. fish sauce

Cooking Instructions

    Take shells off shrimp and just cover with water & boil for about 5 minutes for stock (just the shells). Strain.

    Poach (slightly simmer) mushrooms, shrimp & celery. I put them in the stock in this order. None of them takes longer than 30 seconds and you want the celery to still be crunchy. Strain and cool in fridge

    Add sliced green onion, lemon zest, ginger, lemon juice, fish sauce, salt & pepper. Everything is to taste really but the fish sauce is a must.
