Its a mish mash of different spices , But you get this lovely curry, sweet, Tangy flavour, of all those blends and a hint of coriander not too over powering, made it once then had to make it again suits all tastes, my daughter is not a hot spicy , my son likes sweet and tangy so I found it suited all tastes .

Ingredients

4 servings
  1. 2 tbspButter
  2. 1 mediumonion, chopped
  3. 550 gramsPork Tenderloin
  4. 1/2 tspTurmeric
  5. 1/2 tspCoriander powder
  6. 3 tspmedium Curry powder
  7. 1 dashLemon juice
  8. 2 cupChicken Stock
  9. 1 pinchSalt
  10. 1 pinchWhite Pepper
  11. 1/4 cupSweet corn
  12. 1 tbspTomatoe Sauce
  13. 1/4 cupDouble Cream
  14. 1 tspCornstarch, opt if you want it thicker
  15. 2 tspApple Sauce

Cooking Instructions

    In a fry pan add butter, melt andd add onions and stir

  2. 2

    Add tenderloin all cut to 1 inch cube size and stir and fry until pork is near cooked. It's so tender that it only takes 10 mins to cook

    Add turmeric, coriander, and curry powder and mix well

  4. 4

    Add corn, and chicken stock amd mix and stir well, lower heat. Cook for 5 mins

    Transfer to a butter greased pan. Add sweetcorn, dash of lemon juice. Bring to boil and lower heat and simmer for 5 mins

    Add applesauce, salt and pepper stir, add tomato sauce, cook on low for 15 mins.

    Add double cream stir in, add cornflour if you like it thicker, then put in a serving bowl. Lovely with long grain rice, Chappatas or half rice, half chips. And some sour cream and sweet mango chutney.

It is a passion of mine and I always invite my family around so I can create something new for them to try. my children grew up learning lots from me I have 3 daughters all with their own families and two Sons one who cooks for his family also my youngest son who is still at home with me,he comes up with some lovely meals and ideas so I'm proud of them all. 💜
