Ingredients

  1. 6hard boiled eggs
  2. 1 tbspMayonnaise to round out the texture more/less as needed
  3. 1 tspSriracha
  4. 1roasted poblano or jalapeno finely chopped
  5. 1 tbspheaping Dusseldorf mustard
  6. To tasteCayenne pepper

Cooking Instructions

    Cook the eggs. -Place the eggs in the pan without water then fill with water until eggs are covered by about 1 inch. -Heat on medium high until little bubbles start forming in the pan. Then turn up to high. -Bring to a rapid boil and let go for 1 minute. -After the minute remove from heat, cover and let sit for 10 minutes. -Drain water, lightly shake pan to crack the shells and top off with cold water.

    When cooled peel and rinse the eggs.

    Slice the eggs in half lengthwise and put the yolks in a mixing bowl.

    Place the egg white halves on a plate.

    Mix the yolks with the remaining ingredients until you hit your desired flavor. Add the mayo to the consistency you like. Use the mayo of your choice but if you can get Duke's brand totally get it for some reason it is way better than the big name brands.

    Pipe or spoon the mixture into the egg white halves. Refrigerate for about an hour to firm up and serve.
