Cooking Instructions

Cut the fish in squares and dry it with a paper towel.

Mix well the flour, baking powder, crushed garlic cloves, egg, bread crumbs, lemon zest, salt and pepper and add the fish to it.

Heat well the oil in a large pan and fry, lowering the fire, for 4-5 minutes on each side, until golden brown and crispy.

Place them on a kitchen towel to drain the excess of oil.

Serve them with mayo and assorted vegetables aside.

Pan-crisped chicken and fines herbes sauce
Because it's been a while, for tonight's dinner I chose to go in a French(ish) direction. Enter fines herbes. Classically, fines herbes would be a blend of parsley, chives, tarragon, and chervil. Unfortunately, I have never ever seen chervil in my local supermarket, so classic went out the window. Instead, I threw in a little sweet basil, as well as a little dill I had lying around. Tradition aside, just about any soft herbs will really work in a pinch. And boy, did they work. Just a dollop of fines herbes was enough to elevate a butter pan sauce from good-but-simple to wow, that's really delicious. As a bonus, because the fines herbes was made as a paste, I can use it throughout the week to fancy up everything from scrambled eggs to a a cream sauce for steak.

My daughter-in-law sent me a website for this recipe. It is called “ npfamilyrecipes.com. I improvised a little. I would not call it a recipe, because the dough, which is the most difficult to make, is store bought. For the filling, I used the recipe from the website. But instead of putting raw onions, I cooked the onions. I added some bread crumbs. Used oil instead of water in the egg yolks. Cooked a little longer than the recipe called for.I still have leftover filling. Will have to buy more puff pastry to use it up.

Gratin Made in a Frying Pan
It's a lot of trouble to make white sauce for gratin dishes! But if you make it in a frying pan along with the other ingredients, it's easy ♪- Basic bechamel (white) sauce is made with flour, butter and milk in a 1:1:10 ratio. Change the amount of milk depending on what you're making.- If using a non-stick pan, the gratin won't burn and will come off the pan easily with a rubber spatula.
