California Farm Breaded Beefsteaks
Inexpensive, pan fried, then oven baked, simple recipe that makes a tender steak everybody loves, with mild garlic kid version. Panfried one at a time, then finished in a very hot oven till served.
Steps
- 1
In food processor, mince 1 peeled garlic clove per adult and 1/2 clove per child with parsley or baby spinach to paste.
- 2
Optional: instead of using fresh cut steaks, you can marinade the steaks overnight first, like beef tamarind.
- 3
Rub each steak on both sides with paste of minced garlic and parsley, dip one side in two freshly beaten foamy eggs, press into breadcrumbs and let dry about ten minutes.
- 4
Then turn the steaks, dip other sides in another two freshly beaten foamy eggs, press into bread crumbs and dry another ten minutes. Then turn. The longer you dry, the thicker the steaks will get.
- 5
Preheat cast iron skillet to very hot. Test with drop of olive oil, when it starts to smoke, the skillet is very hot. Spray the bottom of the breaded steak with 1/2 Tbs of olive oil, brown the bottom of the breaded steak, one minute, spray top of breaded steak with 1/2 Tbs olive oil, flip, brown other side 1 minute.
- 6
Move browned steak to preheated oven proof serving platter in 450F degree oven. Stack each Panfried breaded steak on top of each other in oven to prevent the bottom ones from overcooking. 4 Steaks will take ten minutes. Bottom steaks will be medium done, top steaks will be medium rare. Cut in thin strips. Serve with rice, potatoes, pasta or over fresh cut green leaf vegetables like spinach and enjoy.
