
Rassted root vegetable stew

Cooking Instructions

Chop all vegetables into medium sized cubes and pre heat oven to 200°c

Add root vegetables to a roasted dish and dress with a tbsp of oil. Put in overn for 35mins
- 3
Once 30 mins is up, start lightly frying onion and garlic until browned on medium heat
- 4
Add the roasted vegetables to the pan and add the tin of chopped tomatoes.

Let all cook for 10 mins and then reduce the heat slightly and let simmer for a further 20 with occasional stirring.

This is a recipe for cold winter days for my married older brother and his wife who are busy with work and child rearing. This warm stew is nutritious, prevents colds, and has plenty of carrots.If you really sear the meat well at first before adding the wine, it ends up delicious. I usually add mushrooms and potatoes when I make it, but when I make it to freeze I leave out the potatoes. When adding potatoes, add them in during Step 5 as you add the can of demi-glace sauce.
