Sweet Potato Croquettes Sweet Potato Croquettes
I got a lot of sweet potatoes as a gift, so I made them into croquettes: my children's favorite. The texture depends on what kind of sweet potatoes you use. If you don't like it flaky, adjust thickness with milk or fresh cream. I tried to keep the other ingredients to a minimum to highlight the natural taste of the sweet potatoes. Portobello (or Cremini) Mushroom Cutlets Portobello (or Cremini) Mushroom Cutlets
These are Portobello (or cremini) mushroom cutlets, a variation of the common white mushroom. This type of mushroom has a very delicate flavor and a firm, meaty texture, making it perfect for this kind of preparation (but honestly, it's delicious cooked any way).Mushrooms are a very important but often underrated food: they contain vitamins (especially D, which they are a great source of if grown properly), minerals, and protein. They are very low in fat (and only contain polyunsaturated, or "good" fats) and are low in calories (22 kcal per 100 grams). They're perfect for anyone following a meat-free diet, trying to lose weight, or looking to manage their cholesterol levels..You can make these cutlets either in the traditional way or in a lighter (even vegan-friendly) version, depending on your preferences and needs. The dish in the photo was made using the lighter version and baked in the oven. Eleonora AmatoTranslated from Cookpad Italy -
Bubble and Squeek Cakes with Kale and Bacon Bubble and Squeek Cakes with Kale and Bacon
From what I understand this dish got its name from the sound of boiling the potatoes (bubbling) and the squeek of frying the patties. You can use leftover mashed potatoes and add any veggie desired to make these your own! Common in the UK and Ireland.. sammie27 -
Baked Milanese-Style Crispy Cutlets Baked Milanese-Style Crispy Cutlets
Authentic cutlets usually involve frying beef or pork, but I wanted something healthy and delicious, so I decided to bake mine in the oven instead.I often use this method for the pork cutlets as well in our family. It's great because you can make a side dish while baking the meat, and this method cuts down on calories a lot.Pound on the chicken (beef or pork), and make it really thin.It makes the cutlets crispy and light. These cutlets are also quite tasty with tomato sauce or Japanese Worcestershire-style sauce.
