Ingredients

12 servings
  1. 3/4 cupunsweetened applesauce
  2. 2/3 cuppure maple syrup or honey
  3. 2large eggs, at room temperature
  4. 1/3 cupunsalted butter, melted and cooled
  5. 1 1/2 tsp.vanilla extract
  6. 1 1/2 cupswhole wheat flour
  7. 1/4 tsp.baking powder
  8. 1/2 tsp.baking soda
  9. 2 tsp.cinnamon
  10. 1/2 tsp.allspice
  11. 1/4 tsp.nutmeg
  12. 1/2 tsp.salt
  13. 1/2 cupold fashioned rolled oats
  14. 1/2 cupchopped walnuts
  15. coarse sugar, for topping

Cooking Instructions

    Preheat the oven to 350°F. Grease a standard size muffin tin or line with parchment paper liners and set this aside. In a large bowl, whisk together the applesauce, maple syrup, eggs, butter and vanilla and set that aside.

    In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg and salt. Pour the dry ingredients into the wet and use a rubber spatula to mix until just combined. Then fold in the oats and the walnuts.

    Scoop the batter evenly into the muffin tins and bake for 15-22 minutes, or until a toothpick comes out of the centers clean. Then, remove them from the oven, let them cool in the pan for 5 or so minutes, then pop them out of the pan and place them on a cooling rack to cool completely.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
