My late husband wanted me to come up with a tuna salad with a kick, so here is what I came up with. It is a favorite recipe that my family loves.

I was watching season six of Seinfeld, and I decided to make my own version of the "big salad."

I am dieting and trying to substitute things to keep me on track. I LOVE taco salad at Mexican restaurants, but with the shell the calories KILL! To keep me on track I decided to try my own version. 600 calories later (with 8oz of seasoned meat) it works for me! I am also trying to cut back on carbs so this is perfect and keeps me full until dinner. I hope y'all love it!

Have you went to make deviled eggs and part of the hard boiled egg is torn by peeling the shells off? If so here is a good way of dealing with it. Slice the messed up part off and put that messed up part in to the salad part. I would have had 12 deviled Eggs in the salad but only 7 of them were not messed up so the other 5 egg halves went into the salad mix.

At a Greek restaurant about 40 miles away the served me a salad similar to this one so it inspired me to make this one.

The cream cheese mixed in at the start will melt with the heat of the potatoes and coat the other ingredients, added later,the cheese will stay in chunks. I love eating salads. There's a small restaurant near my workplace and I often go there for lunch.This salad is for 1 serving, basically a main course. I used steamed chicken but a grilled chicken will be perfect too. The dried raisins give some sweetness to this salad. Let me know if you tried it and how you make it your own.
