Cooking Instructions

Get a deep pan like a bread pan or a small size baking tray and line it with parchment paper. Let the par hment paper come above the edges of the tray because the candy foams up. Thats what creates the air pockets and gives it that honey come look.

In a pot, mix the water, sugar and corn syrup together till the sugar dissolves. Then place it on the fire on low to medium heat and gently bring to a boil without stiring. This is to prevent the sugar from crystallizing at the sides of the pot.

It takes about 10 minutes from the time it starts boiling to come to a hard crack stage but if you have a candy thermometer, its 150 °C or 300°F.

Once you achieve this, pour in the baking powder and whisk. You have to work fast but very carefully. The mixture will start to bu ble and increase. You can mix in the vanilla flavor now or at the time of boiling the water and sugar (your choice on which you prefer to do).

It is very important not to over mix this so as not to remove the air so once your mix in the baking powder, pour it out in the pan. Do not spread it with a spatula (IT WILL DEFLATE). Just let it be and leave to cool. Once cooled, you can crack it to different pieces and enjoy
