Malai kofta Malai kofta
Malai Kofta is a delicious dish of fried meatballs in a rich and creamy mild gravy. This melt-in-your-mouth recipe is a labour of love, but one that is well worth it.Malai’ means cream and ‘Kofta’ are fried meatballs of various ingredients. Malai Koftas are popular not only in subcontinent cuisine, but also in Middle Eastern, Balkan and Asian meals as well.In this delicious restaurant style malai kofta recipe, the kofta are made of ground chicken, spices and then fried. Finally the koftas are dunked in a smooth, mildly sweet and lighted spiced curry. The combination of the kofta with the curry tastes awesome. You’ll just have to try it to find out! Sarvat Hanif -

This is my entry for rice competition...Biryani, also known as biriyani, biriani, birani or briyani, is a mixed rice dish that originates from the Indian subcontinent though the exact origin of the dish is uncertain.biryani takes time and practice to make but is worth every bit of the effort. This is definitely a special occasion dish.Biryani has been and continues to be the favourite dish among Karachiites. It’s rare to find someone who doesn’t love the delectable blend of meat, rice, spices, and of course raita. Turkish Kofta Meat Patties Turkish Kofta Meat Patties
This is a meat dish that my Dad apparently ate a lot when he lived in Turkey.I re-arranged the recipe so that's easy to create at home.Since Turkey is a Muslim country they don't eat pork. Therefore if you want to make authentic kofta you should try making them with minced beef or mutton. The key to this recipe is to keep mixing the ingredients together until the mixture becomes sticky. You can adjust the amount of cumin powder and red pepper to achieve the level of spiciness that's best for you.Kofta aren't traditionally eaten with sauce or condiments so it's best to flavour them well before cooking. Chicken Biryani Chicken Biryani
This dish may take a little while, but the steamed rice comes out ethereal, fragranced with the whole spices. I used Shan brand biryani seasoning per the recommendation of my friend who grew up making this dish. Remember to remove the whole spices before eating. Serve with yogurt tossed with cucumbers, or if you can find it, fermented curried limes. Lance Wilson -
