Kofta with Tomatoes

This recipe you could change the choice of vegetables
1 you could cook it with potatoes just wash and cut and spread over or under meat
2 you could change tomatoes sauce to tahini sauce all what you have to do is 1/2 cup tahini with 2 cloves of garlic juice of 2 lemons and 2 tablespoon olive oil mix all together add 1/2 cup water and half way of cooking kofta you add tahini sauce enjoy

Cooking Instructions

Mix the meat with all the spices and spread it on tray our kofta we spread it we do not loge it sorry not meatloaf 😆

Lay vegetables on top cook add 1/2 cup water

Cook at 450 f for 10 minutes then add the tomatoes sauce change temperature to 350 and bake for 45 minutes enjoy it with yellow rice

This is a meat dish that my Dad apparently ate a lot when he lived in Turkey.I re-arranged the recipe so that's easy to create at home.Since Turkey is a Muslim country they don't eat pork. Therefore if you want to make authentic kofta you should try making them with minced beef or mutton.The key to this recipe is to keep mixing the ingredients together until the mixture becomes sticky.You can adjust the amount of cumin powder and red pepper to achieve the level of spiciness that's best for you.Kofta aren't traditionally eaten with sauce or condiments so it's best to flavour them well before cooking. I had made this Palak kofta curry for dinner last night. Koftas turned out really delicious. My son gobbled up a couple of koftas just like that... said they tasted good as is and didn't want to wait until the curry was ready. The spices in the gravy were well balanced. Koftas had a thin crispy covering with soft flavourful center..Flashback⏪, my mom used to make palak kofta curry when I was a little girl. My last attempt at making these koftas was way back in 2001. As a newly-wed I wanted to impress hubby dear.😉 Needless to say, the curry did not turn out the way I had imagined or remembered how it tasted when mom made. Unfortunately, picking up phone & making a call across oceans, every time I attempted something to cook was not an option back then...blame it on time zone difference and high international call rates.😆.Current day⏩, years of experience and confidence in my cooking skills and a zeal for variety in my meals got me to making these palak koftas again.
