Start by soaking your basmati rice for almost 30 minutes or an hour. Then wash and cook it together with bay leaf whole cloves and peppercorns till it’s almost cooked through then drain and set aside

Slice your onions and finely chop your tomatoes and slit your chillies

To make the kofta in a food processor or blender add your minced meat chopped parsley, seasoning cube ginger garlic paste 7 spices chillies onions and coriander then blend till smooth

Next Rub oil on your hands then take a potion of the meat and shape them in to balls. Then put them in the fridge for 30 minutes this will make them a little bit firmer

Add oil in your non stick pan and fry the kofta till all sides are browned. Drain and set aside

To make the biryani gravy start by adding ghee/ oil in your pot then add your chopped onions and fry them for few minutes then add whole cloves, cardamom, blackpepper corns, cumin, and continue frying them till the onion is translucent

Toast some cumin and coriander seeds in a pan to release their aromatic flavors then grind them in to powder

Add the chopped tomatoes, ginger garlic paste, seasoning cube cooking cream turmeric and cook till oil separates

Next add your kofta and chopped parsley, while chillies and mint leaves, add boiled potatoes And mix gently

Add your cooked rice and drizzle over the food colors and the lemon juice cover the pot with foil paper and allow it to steam over low heat for about 20 minutes

Now gently stir the rice it’ll now be two colors and take a potion of it and set aside. Next gently mix the remaining rice in the pot

To serve add the rice to your serving dish then top it with that rice hat you set aside and garnish with chopped parsley, lemon wedges or even eggs

Important note m: the reason why I didn’t add the measurements is because everyone’s taste is different so you can always adjust the spices according to your own personal preference.

Substitute ghee with neutral tasting oil

You can use plain yogurt instead of cooking cream.

Ingredients. 1 tablespoon Ground Allspice. 1 tablespoon Ground Cloves. 1 tablespoon grated nutmeg. 1 tablespoon ground fenugreek. 1 tablespoon ground ginger. 2 teaspoons Ground Black Pepper. 2 teaspoons ground cinnamon.
