Vegan "Buttermilk" Biscuits

I am completely out of everything. I followed measurements from a recipe online and improvised. They came out tasty.

*I've read coconut oil is not a healthy fat to eat. I have coconut oil leftover from diy beauty products. It was the only fat I had in the house, use any solid vegan butter you have. I also only had non-dairy coffee creamer and lemon pepper in replace of non-dairy milk and lemon juice. For a recipe with proper ingredients, use the real items.*

Ingredients

  1. 2 cupsflour
  2. 1/4 cupICE COLD coconut oil
  3. 3/4 tspsalt
  4. 1 tbsbaking powder
  5. 1/2 tbslemon pepper
  6. 1/2 tbswater
  7. 2 tbsnon-dairy coffee creamer
  8. 1/4 cupboiling water
  9. 3/4 cupcold water

Cooking Instructions

  1. 1

    Mix creamer with boiling water. Once dissolved add to 3/4 cup cold water. Mix 1/2 tbs water with 1/2 tbs lemon pepper. Add to "milk". Stick in the freezer for now.

    Mix dry ingredients together. Cut cold oil in to dry ingredients, til crumples of oil are evenly through flour.

    Mix in "milk". Form 8, 1 inch thick, biscuits. *I made mine huge. I only got 4 out of this mixture.*

    Preheat oven to 450° bake for 10-15 mins.

Living up in the mountains, not always having the gas, time, or best weather conditions to get to town for groceries. We run out of things quickly and I have to use what I have. Though I now have a stove and oven, many of my recipes here were from when I didnt. I've had to get quite creative, and find other ways to cook. Like in a toaster oven and an electric skillet. I thought if anyone else has my same issues it'd be great to share my simple minimalist recipes. And find some great ones too.
