Ingredients

  1. 2Large Potatoes (or 3 medium)
  2. 1 sliceonion minced
  3. Salt
  4. Pepper
  5. Italian Seasoning
  6. Vegetable Oil
  7. 2Eggs
  8. 1/2Avocado

Cooking Instructions

    Rinse potatoes and chop into cubes, layout on a baking pan.

  2. 2

    Slice up onion and sprinkle over potatoes evenly.

  3. 3

    Add salt, pepper and Italian seasoning.

  4. 4

    Poor a small amount of vegetable oil over potatoes and mix together (not too much, just enough to keep the potatoes from sticking and to make them crispy).

    Preheat oven to 420°F. Bake for 25 minutes (until golden and crispy).

    In a bowl beat eggs and add salt and pepper. Scramble eggs into small pieces.

    Once potatoes are done, mix them in with the eggs.

    Lastly, chop up avocado into cubes and mix it in.
