Quick & Easy No-Cook Mediterranean Tomato Melange for Fish & Chicken Quick & Easy No-Cook Mediterranean Tomato Melange for Fish & Chicken
This light and delicious no-cook topping is great for fish, scallops, white meat chicken, and bruschetta. For a super easy completely no-cook meal idea, you can slice up the breast from a storebought rotisserie chicken, top it with some of this stuff, and serve a good crusty bread on the side. (Or no bread if you're going light on the carbs.) A complete meal in minutes!Or you could put it between a sliced focaccia with some Italian coldcuts and provolone and make yourself a delicious muffuletta. :)This recipe makes about 3/4 cups, which is enough to top two servings of protein, but you can easily double it. x -
Fish in homemade red curry Fish in homemade red curry
Several months ago I posted a recipe for green seafood curry. Today it's red's turn. To be honest, I actually prefer red curry to green. I love the extra kick of heat. The addition of sweet bell pepper gives this version a bit of additional freshness, almost like a fruitiness. As written below, this curry is pretty mild (so that my daughter could eat it). If you'd like more heat, just add extra Thai chilies. Also, feel free to play around with the veg. I used carrots and bok choy because they happened to be in my fridge. Robert Gonzal -

Indian fish cakes Indian fish cakes
Just felt like experimenting today. I wanted fish and could taste indian flavors already. So i decided to make these. Inspired by my indian heritage i decide to put a twist on fish curry and make these cakes. They turned out quite delicious. Try this recipe, build on it, make it better. This was my first run at this one and it can be tweaked in lots of ways. But it is VERY good the way it is. Chat masala can be purchased at any indian market and some international markets. Its an all purpose indian seasoning. You can use whatever you like or have on hand....ENJOY!!!!!!! nkboxerdude -
