Honestly this salad was thrown together last minute and it came out exceedingly well!

Ingredients

20-30 min
3-4 people
  1. 1cauliflower head
  2. 1 cuparugula
  3. 1/4 cupthinly sliced red onion
  4. 1 cupcooked quinoa
  5. For dressing:
  6. 5 tbspextra virgin olive oil
  7. 1whole juice and zest of a lemon
  8. 1 tbspsalt & pepper

Cooking Instructions

20-30 min

    Cook quinoa as per package instructions (I did 1:2 ratio of quinoa and water)

  2. 2

    Place cut and separated cauliflower sprouts in a steamer for 5-10 min until softened

  3. 3

    Slice red onion in thin strips

  4. 4

    In the mean time, mix in dressing ingredients in a small bowl to add later

  5. 5

    Once everything is cooked, toss together in a large bowl. Add the dressing and you’re done!
