Ingredients

4 people
  1. 1 blockfirm tofu
  2. 2 cupsspinach or lettuce
  3. 1onion
  4. 1red bell pepper
  5. 1yellow bell pepper
  6. 2 cupsmushrooms
  7. 2garlic cloves
  8. 2 tablespoonssoya sauce
  9. as neededolive oil
  10. 4tortillas
  11. to tastehummus

Cooking Instructions

    Add oil to pan on medium heat.

    Bring to temperature and add in onion and garlic.

  3. 3

    Allow that to caramelize and add in peppers and mushrooms. Cook 5 min

  4. 4

    Add in tofu and leave it to crisper on each side for a few minutes each.

  5. 5

    Add soya sauce to the mixture and toss in pan.

  6. 6

    Lay the tortilla out and add hummus and lettuce or spinach. Add the tofu mixture on top.

    Roll wrap and put back in pan to toast the outside for 30 seconds on each side or until golden brown on medium-low heat.
