Ingredients

  1. 2 cupscucumber (about 250 grams), grated
  2. 1 cupthick plain yogurt (about 250 grams)
  3. 1small onion, finely chopped
  4. 1 teaspoonyellow mustard seeds, finely ground
  5. 1 tablespoonroasted cumin powder
  6. 1green chili, finely chopped
  7. 1/2 teaspoonred chili powder
  8. 1/4 teaspoonturmeric powder
  9. 2 tablespoonsfresh cilantro leaves, chopped
  10. Salt, to taste

Cooking Instructions

    Whisk the yogurt in a bowl until smooth.

    Wash and grate the cucumber. Finely chop the onion.

    Grind the yellow mustard seeds into a fine powder.

    Add the mustard powder, red chili powder, turmeric powder, cumin powder, cilantro, and chopped green chili to the whisked yogurt. Mix well.

    Add the grated cucumber and chopped onion. Mix to combine. Garnish with cilantro and refrigerate to chill.

    Serve the Pahadi cucumber raita cold.
