  1. For Shrimp
  2. 1 bagextra large peeled/deveined shrimp
  3. Your favorite Cajun seasoning
  4. Garlic Powder
  5. Salt
  6. Pepper
  7. Old bay
  8. 2 tablespoonsolive oil
  9. For Cole Slaw
  10. Tricolor bag of cole slaw
  11. 1 tablespoonHoney
  12. 1-2 tablespoonsMayonnaise
  13. The juice of 1 lime
  14. 1 Teaspoonrice vinegar
  15. to tasteSalt and pepper
  16. For Shell
  17. Yellow corn tortillas
  18. Toppings
  19. Fresh Cilantro
  20. Cojita Cheese
  21. Mexican blend shredded cheese
  22. slicesAvocado
  23. Fresh lime
  24. Aji Amarillo Sauce (ingredients to follow)
  25. 2jalapeños (leave some seeds, but not all)
  26. 1 cupcilantro
  27. 1 tablespoonaji Amarillo paste
  28. 2 tablespoonscotija cheese
  29. 1 clovegarlic
  30. 1 teaspoonwhite vinegar
  31. 3 teaspoonsfresh lime juice
  32. 1/2 cupmayo
  33. Salt/pepper

Cooking Instructions

30 min-1 hour
  1. 1

    Place shrimp in a pan with the olive oil. Season with Cajun, old bay, garlic, salt and pepper. Sear until brown on both sides. Set aside.

    Open bag of cole slaw into a mixing bowl. Add mayo, honey, lime juice, rice vinegar, salt and pepper. Mix well. Set aside

    For Aji Amarillo - don’t skip this! This is the perfect sauce for these! Place all ingredients into a food processor and pulse until mixed.

    Toast tortillas in a hot pan until they start to brown on both sides

    Assemble with cole slaw, avacado, cotija, shredded Mexican cheese, aji Amarillo, fresh squeeze of lime, and a sprig of fresh cilantro!
