Ingredients

  1. 2lemon sole (on the bone)
  2. 1 tspdried oregano
  3. 1 tspdried basil
  4. 1/2 tspdried thyme
  5. Pinchchilli flakes
  6. Pinchfresh dill
  7. 1 tspfennel seeds
  8. 4 sliceslemon
  9. Knobbutter

Cooking Instructions

    Place the lemon sole into a food bag or sealed container and add all of the ingredients. Massage the fish gently and leave overnight or for at least a couple of hours in the fridge to infuse all of the flavours.

    Remove the sole from the fridge and let it come up to room temperature for at least 15 mins. Add a little oil to a warming pan and gently fry skin side down for at least 5mins. Carefully flip over the sole and add the butter and a squeeze of lemon juice and gently baste the fish for about 3 minutes.

    Serve with a nice little salad and a spoonful of the lemon butter juices napped over the fish.
