Egusi peppersoup (delta way)

This is one of the easiest yet so delicious and satisfying soup from the Niger Delta region (Delta State).
You can decide to make use of fresh fish, chicken or any protein of your choice.
I used goat meat and cow intestines for mine. In delta we take this soup with starch or eba.
Also please note: I was thought from childhood to add a bit of vegetable oil when making this soup and that is a method i stick to because in recent times i have heard some argue they rather not add vegetable oil. But yeah! this is my method i have come to love.

Cooking Instructions
- 1
Put a pot on the fire and allow it to dry up. Then pour in your seeded melons and roast on low heat while stirring continuously until the melons starts to make bursting sounds. This should take like 3-5minutes
- 2
When it has slightly changed color, put down from heat and stir once in a while because the heat from the pot keeps roasting the seeds and it might get burnt. So let it cool completely or pour into a bowl.
- 3
Then put in a blender and add some water and blend to a very lite smooth paste
- 4
Pour the blended melon in a pot and place on heat. Then add the vegetable oil
- 5
Sieve in the meatstock and add the par-boiled goatmeat
- 6
Add the ehuru spice, peppersoup spice, cameron pepper and cover to cook for 5 minutes
- 7
At this stage the stock would have gotten thicker. Then add some water to desired texture and taste for seasoning then add more seasoning and salt if need.
- 8
Add your par-boiled dried fish and cook more for 25-40minutes.

Laswa Laswa
Laswa Recipe is a favorite Ilonggo vegetable soup. It is the equivalent of Bulanglang from Batangas and Dinengdeng from the Ilocos region. What makes Laswa unique from other related vegetable dishes is the addition of shrimp in the recipe. Tanabata The Milky Way Salad Chirashi Zushi Tanabata The Milky Way Salad Chirashi Zushi
We had a Tanabata festival meal with our family friends and I wanted to make something special for the occasion.I didn't have small cookie cutters at the time, so I used a knife to cut vegetables into stars. Using a cookie cutter would simplify this task and result in prettier shapes. You can add red or yellow paprikas or mizuna leaves to add colour to this dish. There are no prep steps to make this dish so it's super easy. Hola friends!!! Here’s a little bit of nothing I made that just tastes so good I had to share. Plenty of leftovers to make a nice pot of this golden beauty. I roasted the chicken and made the rice yesterday just so I could make this today. SherryRandall: The Leftover Chronicles -
