Marbled Loaf Bread

I was thinking of baking a Pullman loaf, good for a gift, and the I saw the beautiful color of the "Kyoto Sanshoku". I came up with the idea to change the strawberry dough to purple potato dough, and I baked the bread with the ingredients on hand.
I gave up baking the danish loaf because of the hot weather. In stead of that, I put heavy cream in the dough to give the bread a rich flavor.

Adjust the amount of purple sweet potato and matcha powder to your liking! I think more richier matcha dough would be nice. (- )ムムム
I'm proud of myself to have make this recipe because of the beautiful colour of the bread slice.
The bread is fluffy because of the heavy cream, egg and cake flour in the dough.

Ingredients

  1. 270 gramsBread (strong) flour
  2. 30 gramsCake flour
  3. 30 gramsSugar
  4. 4 gramsSalt
  5. 30 gramsButter
  6. 50 gramsHeavy cream (or milk if you don't have cream)
  7. 160 gramsMilk and eggs
  8. 4 gramsDry yeast
  9. 5 gramsA. Purple sweet potato powder (dissolve in 2 teaspoons of water)
  10. 5 gramsB. Matcha (dissolve in 2 teaspoons of water)

Cooking Instructions

    Put the bread flour, cake flour, sugar, salt, butter, heavy cream, milk, eggs and dry yeast in the bread maker, and make a dough. Let it knead (for about 20 minutes), and take out the dough and divide it into three. Put the sweet potato powder and one dough piece in the bread maker, and let it work for about 5 minutes.

    While the bread maker is operating, combine the matcha powder and another dough piece, and knead with your hands to mix the powder evenly. If the dough is sticky, dust your hands with flour. You have three colors of dough.

    Shape the dough into smooth balls, and cover with a wet tea towel. Let it rise. The photo shows the dough after rising.

    Let the dough rise for 15 minutes. Stretch the dough into the log which is slightly longer than the length of the loaf pan. Braid the dough together. Place the dough into the pan, be careful not to change the shape. The dough has same colour as dango ball skewers.

    Let it rise again. When the dough fills 80 - 90 % of the loaf pan, cover with the lid. Bake for 30 minutes at 200℃.

    Remove the lid and drop the bread on a work surface to let the steam out. It is fluffy and soft, so cool it down first then slice. It's done.

    All slices have different patters because of the braided dough. This is easy to bake but looks gorgeous.

    Also, this is good for a gift.
