Ingredients

Serves 1 serving
  1. 2 slicescornbread
  2. 1egg
  3. 1/2avocado
  4. Greek yogurt
  5. Mustard
  6. Apple cider vinegar
  7. Cherry tomatoes
  8. 1 slicegoat cheese
  9. Lemon
  10. Salt & pepper

Cooking Instructions

  1. 1

    Prepare the sauce by mixing Greek yogurt, mustard, apple cider vinegar, then add salt & pepper.

    Toast the cornbread.

    Peel and slice part of the avocado, then mash the other part with a bit of lemon.

    Fry the egg sunny-side up and cut some cherry tomatoes.

    Spread the yogurt sauce on each slice of bread, then place the sliced avocado on top. On the other slice, add the mashed avocado, a slice of goat cheese, and some cherry tomatoes. Enjoy your meal!
