A great side dish that pairs with most any meat or fish. "Zip zip zucchini " fast, easy and tasty; never over-powering your main entree. I prefer to use Seasoning powders instead of salt, but whatever you like to add this dish will take any spices or seasonings that you like 😉

Ingredients

10-12 minutes
2-4 people (how hungry are you)?
  1. 2large zucchini's - LENGTH wise cut in half then half again, cut 1 inch pieces
  2. 1small Vidalia onion - chop in 1inch pieces
  3. 3 tbspEVOO (extra virgin olive oil)
  4. Salt & pepper to taste
  5. Onion powder & garlic powder (sprinkle lightly to taste)
  6. 1 tbspdried basil
  7. 1 tspdried oregano
  8. Sprinkle dried red pepper flakes (up to your taste-how hot do you want it?)

Cooking Instructions

10-12 minutes

    Pour EVOO into sauté pan, heat to medium/high heat and add zucchini ; stir, cook for 5-6 minutes on medium heat. ADD onions; stir again till coated with olive oil.

    Add seasonings and toss! Serve quickly because it can over cook in pan and get soggy. That's it ☺️!
