What's the salt concentration of seawater to match with the salt water??
With this method, the clams will always easily spit out sand.

The quieter and darker the atmosphere where the clams are left, the easier they will release the sand.

The clams should be covered with just enough salt water that the tops are barely sticking out. If you are using a large tray or a large amount of clams, double the ingredients. Recipe by Kyoto no taachan

Ingredients

  1. 180 gramsManila clams
  2. 250 mlWater
  3. 8 gramsSalt

Cooking Instructions

  1. 1

Place the ingredients into a shallow metal tray. Use your finger to stir them around. This will make the salt concentration around 3%. Add the clams at this point.

  2. 2

I usually put some newspaper in a plastic bag or clear folder to cover the clams and keep them in the dark. Even if they're wet, they will be easy to handle later.

  3. 3

Leave the clams for 4-5 hours or overnight and you will see that they have spit out the sand.

  4. 4

Place the clams in a bowl and rinse gently with water as you rub the shells together to wash off any impurities. This completes the process.
